This easy one pot dinner couldn't be easier to prepare. No chopping is required, thanks to rotisserie chicken and frozen vegetables. If you happen to have leftovers, they’re great in a burrito or taco.

Ingredients

Cooking spray

4 spray(s)

Peppers and onion mix

1½ cup(s), frozen

Frozen corn

1 cup(s)

Cooked medium grain brown rice

2 cup(s)

Salsa verde

Plain fat free Greek yogurt

cup(s)

Skinless original seasoning rotisserie chicken breast

12 oz, shredded

Shredded reduced fat Mexican-style cheese

Instructions

  1. Preheat the broiler to High. Coat a 10-inch cast-iron or other ovenproof skillet with cooking spray and heat over medium-high. Add the frozen pepper mix and corn; cook until thawed and softened, stirring occasionally, 3 to 4 minutes. Stir in the rice, salsa verde, and yogurt. Fold in the chicken; cook until heated through, 4 to 5 minutes.
  2. Sprinkle the cheese evenly over the chicken mixture. Broil until the cheese melts, 1 to 2 minutes.
  3. Serving size: about 1 ½ cups
