Here’s a great recipe for a vegetarian burger that everyone will enjoy.

Ingredients

Carrots, raw

300 g, grated

Courgette

1 medium, grated

Red onion

1 small

Sweetcorn, frozen, boiled

50 g, thawed

Plain Tofu

150 g, chopped

Breadcrumbs, fresh

75 g

Egg, whole, raw

1 large, raw, beaten

Halloumi

100 g, finely chopped

Coriander, fresh

1 tablespoon(s), chopped

Coriander, Dried

1 tablespoon(s), level

White mini pitta pockets

8 portion(s), (or similar brand)

Salad leaves

Instructions

  1. Preheat the oven to 200°C, fan oven 180°C, gas mark 6. Mist a large baking tray with cooking spray.
  2. Put the carrots into a large mixing bowl and add the courgette, onion, sweetcorn, tofu, breadcrumbs, egg, cheese and coriander. Season, adding just a little salt.
  3. Form the mixture into 8 burgers and arrange on the prepared baking tray. Bake for about 20-25 minutes, until golden brown.
  4. Warm the pitta breads and split them open. Fill each one with a burger and some salad, then serve at once.
