Great and tasty, but I would change it a bit next time. Less ginger!
I agree that the ginger can be a little over powering. Next time will just add maybe a Tbsp of minced ginger. With that change I think this would be really delicious
Really good and filling. I added red pepper flakes for extra kick and chef's seasoning for flavor.
This soup is good and quite filling with so many vegetables. I ate for lunch with a light English muffin. Recipe makes a large amount that lasts thru the week.
