I tried this today, it was wonderful and my husband even loved it, it's on the keep list to make again. I did the squash in the microwave only took 12 minutes. Served it with chicken. Definately a keeper.
Delicious! I made the squash in the microwave 1/2 at a time. Then chopped up 3 plum tomatoes used 1 tsp of olive oil, sautéed 1 clove of garlic then added chopped tomatoes and a little water. Sautéed until the tomatoes released their juices and sprinkled with basil. I'm on the simple filling plan so this was 0 points for me! I didn't need to add the cheese.
So delicious! I make mine with low-calorie marinara sauce and a couple italian-style turkey meatballs to make it a full meal and add extra protein. Next time I will try microwaving it as other reviewers suggested to speed up the cooking time
Delicious and so easy!!!! Added mushrooms and artichokes to my sauce. Made it with some 2 pt chicken meatballs, fabulous meal! Will make this weekly!
