An excellent carrot cake. I used pumpkin pie spice instead of cinnamon and a teaspoon of vanilla to the cake batter to give the flavor more depth. I baked my cake in a 9x9 square dish instead of a springform pan and got good results.
The cake was very delicous and my whole family had nothing but good things to say about it. I love the flavor of the honey and carrots. Most certianly suggest this for any person who loves Carrot Cake!
Delicious. But my husband is diabetic. How many carbs?
Sorry, but I did not like it. It was very heavy, weighed a lot. It tasted like a healthy muffin not a cake.
The sad thing was, I made it for my husband's birthday treat. :(
