1 1/2 cup(s) sugar
2 item(s) egg(s)
2 1/2 tsp baking soda
2 1/2 cup(s) all-purpose flour
1/2 tsp table salt
1 Tbsp half-and-half cream
2 cup(s) low-fat buttermilk
1 fl oz water
1 cup(s) water
8 tbsp Crisco All-Vegetable Shortening
3 cup All-Bran Original wheat bran cereal
- In a bowl: put All Bran Cereal and add boiling water. Let Stand (covered while mixing all other ingredients. All bran mixture is added last.
In another bowl: add sugar, shortening and Cream together...then add Eggs and cream all of that together. Sift together: salt; baking soda and flour. Add Buttermilk to wet ingred alterately with Bran Mixture and mix all together well. (the less you beat muffins, the more tender they are) Bake at 400 for 15-18 min. Makes 1/2 gallon of mix. Keeps well (covered) in refrig until you are ready to use. Can bake 1 at a time or more as needed. ! pint makes 1 dozen. I make the muffins and freeze them. Take from freezer, microwave 10-13 sec. and eat. Yummy and so good for you with the bran
