2 cup(s) uncooked Brussels sprouts, still on the stalk
8 spray(s) olive oil cooking spray
1 tsp sea salt, coarsely ground, or to taste
1/2 tsp black pepper, freshly ground, or to taste
1/4 cup(s) pomegranate seeds, for garnish

Preheat oven to 350 degrees. Wash brussels sprouts well. Trim sprouts off one side of stalk to make a flat bottom, reserving trimmed sprouts. Wrap stalk in microwave-safe cling wrap and heat in the microwave on high for 4-5 minutes (or blanch in a large pot of boiling water). Place trimmed loose sprouts in a bowl, add a teaspoon of water and cover with cling wrap. Microwave on high for three minutes. Place stalk flat side down on large baking sheet with a rim such as a jelly roll pan, sprinkle loose sprouts around it. Spray well with olive oil spray, about 5-8 bursts. Drizzle with sugar-free syrup, season with salt and pepper. Place in preheated oven and roast for about 45 minutes until sprouts on stalk are fork tender and caramelized to a golden color. To serve, place on a holiday platter, sprinkle pomegranate seeds on top for garnish.
