4 cup(s) fat-free reduced sodium chicken broth
3 cup(s) uncooked potato(es), peeled and cubed
2 cup(s) (chopped) uncooked onion(s), chopped
2 cup(s) uncooked carrot(s), chopped
1/4 cup(s) fat free skim milk
1/2 tsp table salt
1/4 tsp black pepper
2 cup(s) (chopped) cooked boneless skinless chicken breast(s), cooked and chopped
- Combine broth, potatoes, carrots, onions, salt and pepper in a Dutch oven, bring to a boil.
Cover, reduce heat, and simmer 35 min (until vegetables are tender).
Place half of vegetable mixture in a blender, process until smooth.
Add pureed mixture, chicken and milk to the dutch oven - cook over medium heat until thoroughly heated.
Option - top with FF sour cream and/or shredded cheddar cheese (***this will change PP value so calculate accordingly***).
