1/2 serving(s) Tillamook Sharp, grated
1 Tbsp taco sauce
1 Tbsp whipped cream cheese, break into pieces or use a teaspoon and measure 3
- You MUST use a non-stick skillet or griddle.
Grate the cheese and scatter it on you griddle in a roughly the size and shape of your tortilla.
Sprinkle the taco sauce all around the cheese. Turn on the head and let the cheese get bubbly and start to get brown crunchy edges.
Place the tortilla on top of the cheese. Continue to cook, keeping a careful eye, as it can burn quickly at this point. When the tortilla is hot, use a spatuala to scrape the cheese up as you are lifing the tortilla. Some of the cheese will want to stick to the pan, just push it back onto the tortilla. Flip the tortilla over, and while it crisps up, just a bit, on the back side, drop the cream cheese in around the tortilla. Fold the tortilla over and serve.
