Baked cauliflower bites with dipping pizza sauce (makes 24 bites)

2 cup(s) uncooked cauliflower, Grated (washed, dried & grated using food processe
2 oz egg white(s), or 2-3 egg whites
1 cup(s) 1% low fat cottage cheese, (drained)
1 tsp ground oregano
1 tsp dried parsley
1/4 tsp garlic powder, (or more if you like garlic)
Pre-heat oven to 450 F Using a healthy cooking oil, spray your MINI muffin tin. Fry the grated "rice-like" cauliflower in a large skillet over medium high heat until slightly translucent (approx 6-8 min). Place fried cauliflower in a bowl and let cool. Place all other ingredients in food processor and blend until smooth. Add the wet mixture from the processor to the bowl with the cauliflower and mix completely. Evenly spoon the mixture into the mini muffin tin and press down evenly & firmly. Pressing down is very important to make sure these stick together. Bake in the oven for 25-30 min or until golden brown and crispy on the outside. Remove from the oven and let it cool for 5-10 min. This step is very important so they don't fall apart. Once cool, remove from mini tin, you may need to run a thin knife along the edges. Serve with pasta or pizza sauce for dipping and Enjoy! Tips: Make sure cauliflower is dry after washing. Bake until crust-like. If they aren't golden after 30 min, bake longer. Every oven is different.
