1 Tbsp light butter
1 tsp vanilla extract
1/2 tsp table salt
2 tsp baking powder
2 1/2 cup(s) uncooked oatmeal, old fashioned oatmeal
2 large egg(s), Beat the eggs to mix.
Adjust oven rack to middle of oven and preheat oven to 375 degrees. Line cookie sheet with regular (not heavy duty) aluminum foil, shiny side up. Spray foil with nonstick spray, usch as Pam. Beat the eggs using an electric mixer to mix. Gradually beat in sugar. Increase the speed to high and beat for 10 minutes. Melt butter and set aside to cool. Add the vanilla, salt and baking powder to eggs and beat to mix. Place oatmeal in large bowl. Add the egg mixture and stir to mix. Drop slightly rounded small teaspoonfuls onto cookie sheets 3 inches apart. Bake for 11-12 minutes reversing sheet front to back once during bake time. Let them cool on cookie sheet. With metal spatula, transfer the cooled cookies to paper toweling. Foil can be wiped and resprayed to bake remaining cookies.
