2 tsp olive oil
16 oz uncooked center loin pork chop, 4 4oz boneless pork chops
1/2 tsp table salt
1/2 tsp black pepper
2 Tbsp uncooked shallot(s), finely sliced
2 tsp fresh thyme
1 cup(s) Emeril's All natural chicken stock, divided in half
2 cup(s) unsweetened canned peach(es), Need 16 wedges - 2 cans, drained and dried on pape
2 tsp honey
2 tsp regular butter
- Heat lg skillet over medium high heat. Add oil and swirl. Season chops with salt and pepper. Add chops to pan, cook for approx 3 min per side or until done. Remove chops from pan and keep warm. Add shallots, thyme and peaches to pan-cook for 2 minutes. Add 1/2 cup chicken stock and loosen browned bits. Cook unil reduced to 1/3 cup - approx 2 minutes. Add honey and remaining stock and bring to a boil-cook until reduced to 1/3 cup-approx 2 minutes. Remove from heat and stir in butter. Spoon sauce over chops. 1 serving is 1 pork chopm 4 peach wedges and approx 1 1/2 tblsp broth.
