Lucious, but forget 20 min. prep--more like 45. Takes 8 min. alone to peel and chop jicama! The recipe in our weekly flyer calls for 2 tsp. walnut oil instead of red. calorie mayo--I used sesame oil--AND 2 T. chopped walnuts, 3 min. more to grate apples (I used gala). I doubled the vinegar for moisture and added 2 T. juice. This makes more like 10 generous servings.
