8 oz reduced-fat shredded Monterey Jack cheese

Place thawed chicken in non-stick pan and cover with salsa. Simmer over medium heat till chicken is cooked. Remove chicken and shred- return to salsa. Add can of beans and heat through. Serve over rice sprinkled with cheese.
