I make a huge batch of this and freeze it in containers so I have enough for about 3 weeks. I also save tons of time by using ALL frozen vegetables that are chopped up. I add green beans and cauliflower to the vegetables as well. It is awesome. When eating I switch things up by adding a little parmesian cheese sometimes or a spoon of salsa and a touch of fat free sour cream. Delicious both ways! For a meal you can add a little pasta and beans or chicken.
