Love this soup as it's so low in points and flavorful. I put my emergent blender in and made a nice thick blended soup.
I put zucchini, summer squash, carrots, tomatoes and onions in as this is what I have available.
I used green beans insteda of zucchini and I also added a bit of red pepper and balsamic vinegar. Made it for the family.
I added a little bit of chicken. I figured it added a point. I also added extra carrots, spinach, kale, and fresh tomatoes. A little hot sauce finshed it off! Delicious!
This soup is so versatile it can be eaten at any time. Take a cup of veggies and mix it with 3 egg whites in a tsp of olive oil, top it with a dash of hot sauce, you have a yummy breakfast omelet for 3 points! Cut up a chicken breast and mix it in with a cup of soup for an amazing 4 point lunch! Dinner - whip up a bacon and cheese turkey burger with some slender soup instead of "thigh" fries (heeheee) for 10 points. That's a 17 point day that fills you up and leaves room for snacks!
