2 pound(s) cooked boneless skinless chicken breast(s), cooked and then shredded
2 1/2 oz Old El Paso® Seasoning Mixes Taco Seasoning Mix
10 oz canned enchilada sauce
1 cup(s) Weight Watchers reduced fat Mexican style blend shredded cheese
16 oz fat free canned refried beans
1 cup(s) uncooked onion(s), finely chopped
2 cup(s) canned chicken broth
10 item(s) corn tortilla(s)
8 oz Weight Watchers reduced fat Mexican style blend shredded cheese
- Boil chicken in chicken broth until tender. Shredd chicken with a fork and then add taco seasoning. Preheat oven on 400. Line the bottom of a casserole dish with 5 corn tortillas . Mix refried beans and enchilada sauce and then layer on top of the tortillas in the casserole dish. Put the remaining 5 tortillas on top of the bean mixture. Place the chicken on top of the tortillas. Sprinkle cheese on top. Bake until cheese is melted.
