1 small uncooked onion(s), yellow onion, coarsley chopped
1 medium uncooked carrot(s), coarsley chopped
1 rib(s) (small) uncooked celery, 1 stalk- coarsley chopped
2 item(s) canned chipotle peppers in adobo sauce, 2 canned chipotle peppers
20 oz Jennie-O Turkey Store Lean ground turkey, 1 package (20 oz)
1/2 cup(s) quick cooking rolled oats
2 large egg white(s)
1/4 cup(s) ketchup, topping
- Add all veggies and peppers in a food processor and pulse (or finely chop) -In a large bowl add all veggies, turkey, oats, and egg whites and mix gently. - Measure 1/3 cup of meat mix into 9 wells of a standard muffin pan that has been sprayed with non stick spray.- Bake at 350 F for 20 mins then top with ketchup and bake for 5-10 more mins. Cook to internal temp of 170 F and let stand for 5 mins- Enjoy!
