This was my first time cooking with venison. It is so good! The recipe is very forgiving - I had more than one pound of venison; I used baby carrots instead of peeling and cutting large carrots; I didn't peel the potatoes, either; I used frozen chopped onions instead of chopping onions; and I used more celery than the recipe called for. Everything is very tender, especially the meat. I hope I get more venison to make this recipe again!
