2 tsp olive oil
3 clove(s) (medium) garlic clove(s), minced
43 1/2 oz canned diced tomatoes, 3 cans (14.5 oz) no salt with liquid
3/4 tsp table salt
1 tsp black pepper
1/2 tsp cayenne pepper
1 cup(s) fat-free half-and-half
2 1/3 cup(s) fat-free reduced sodium chicken broth
Heat ol in large pot, add garlic and saute a bit. Add broth, tomatoes with juice and spices. Bring to a boil...reduce heat and simmer at minimun 20 minutes...Sometimes I simmer longer. Stir in basil and half and half. Let cool a little and blend in blender unitl smooth...or u an leave some chunky if you prefer. Garnish with basil if desired.
