We used regular salsa instead of roasted red peppers. It cooks well, and it helps add flavor. I also used home grown sweet corn, (my grandpa farms, so it may be hard to get your hands on some good stuff. Go to a farmers market and freeze if you can, it's the best for winter months!) and we also used a little bit of ranch (maybe a tsp?) in the sauce. I mixed up the salsa in the magic bullet, but a blender would work as well. It was amazing. I have definitely found a new favorite..
