Ingredients

1 1/2 cup(s) canned enchilada sauce   
8 oz low fat cream cheese   
1 Tbsp cilantro   
2 cup(s) low fat shredded cheddar cheese   
8 medium flour tortilla(s)   
  1 cup(s) canned refried beans   
  3 breast(s) uncooked boneless skinless chicken breast(s)   

Instructions

  • warm chream cheese in microwave, mix with 2 Tbls enchilada sauce and cilantro. Bake chicken breasts at 350 degrees until done. Cut into bite sized pieces. Mix together chicken and cream cheese mixture. On each tortilla, spread some refried beans evenly. Spoon the chicken mixture down the middle and sprinkle some cheddar cheese on top. Rol up tortilla and place in baking dish. Once all the tortillas have been completed, pour remaining enchilada sauce on top and sprinkle with remaining cheese. Bake at 350 until cheese melts.

My first time making this, followed the directions exactly and this dish was delicious, my 9 yr old ate it for breakfast.
