The soup is really good. I did not add the mushrooms.
I make a big pot and store it in the Frig to eat some all week. I also add a bag of Steamable Broccoli, Cauliflower & Carrots and oriental seasoning for more flavor!!! LOVE IT!
Nice soup. I replaced the wakame with arame, as arame seaweed has a milder taste. I also added carrots to boost the soup's texture.
For you Nipponophiles, adding a 1-inch strip of Kombu to water as water simmers (remove before a boil) and 1 tsp. of dashi to stock adds authentic flavor and taste satisfaction.
