1 cup(s) packed light brown sugar
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1 tsp baking powder
1 tsp baking soda
1/4 tsp table salt
1 cup(s) canned pumpkin
1/2 cup(s) canola oil
1/2 cup(s) low-fat milk
1/4 cup(s) Egg Beaters Egg substitute
1 tsp vanilla extract
2/3 cup(s) semisweet chocolate chips
3 Tbsp chopped pecans

preheat oven to 350 degrees. Spray a loaf pan with nonstick spray. In a large bowl, mix the flour, sugar, spices, baking powder, baking soda and salt. In another bowl, whisk together the pumpkin, oil, milk, eggs and vanilla. Add the wet ingredients to the dry along with a few handfuls of chocolate chips and/or nuts, and stir just until the batter comes together. Scrape into the prepared pan and bake for an hour, until the top is cracked and springy to the touch.
