Love these muffins. Made with sunflower seeds (1/4 c) in lieu of wheat bran and added dried cranberries instead of raisins.
Fill tins to top cause they don't rise all that much. That's your 4 pointer
Next time I may add raisins, they were a little dry, but taste good. I will make these a lot!
These muffins are addictive and delightful. They have a molasses overtone that is so good and makes up for them not being very sweet. Also, the grated apple makes them moist - instead of oil. I added blueberries which turned out great. I also did a version with some grated orange zest and some dried cranberies (add a point for the cranberries). Excellent as well. Oh, and I baked them in a muffin top pan, so they were even better!
