I made this into Cream of Cauliflower cheese soup. I substituted : 1 cup 1% milk for can of FF evaporated, 5 green onions for leek, 1 16 oz. bag frozen florets for head of cauliflower, added 1 stalk celery diced w/ leaves, 8 baby carrots shredded. After using handheld emersion blender I added two wedges of WW garlic and herb light cheese-finely diced and mashed. Fabulous!
