These are very good with minor revisions. I used 2 egg whites rather than 1 egg. I also added 3/4 C no sugar apple sauce to offset what others were saying about being dry. I made "true" mini-muffins (bite size) and yeilded 48 muffins. Baked for 12 minutes and they were fully cooked. As a topper, to reduce calories and fat intake, I purchased sugar free caramel for drizzle. ALSO, I did NOT use real sugar, I used Truvia. My husband agreed they were wonderful bite size treats-1 is enough.
