A cup of uncooked quinoa yields about 4 cups cooked. this was a pretty large dish. I ended up adding more tomato, a little more olive oil, salt and pepper. It was very good and filling.

Loved this recipe. I did make couple of changes. I used lemon juice instead of vinegar and added garbonzo beans,cucumber,celery. Delicious
