I've never been successful using Quinoa but decided to tray again. I bought pre-cooked Quinoa in a microwavable pouch at Target—90 seconds in the microwave and it's cooked!
So I modified the recipe to use that product, which reduced the PointsPlus value a bit.
Then I added 6 oz. of cooked Chicken breast, and some garlic and onion powder to add some flavor.
I'm happy with the result. And I'd make this modified salad again.
