This was so easy to make and is delicious and hearty! I ate it warm when I first cooked the pasta, then had it cold for lunch the next day - it was wonderful both ways!
Great recipe to take to work for lunch. Flavorful, filling and you will really only need 3/4 cup to have a satisfying meal (and cut down on points!).
This is a truly awesome recipe for taking to work in the lunchbox! Beats the heck out of boring old sandwiches! I used the full tablespoon of lemon zest and didn't find it too lemony. This will become a summer staple in my diet long after I've reached goal weight and am maintaining.
Easy, simple, will be great in summer for a nice cool entree on a hot day. Also threw in some kalamata olives which added 1 point.
