Extremely easy. I subsituted the Cottage Cheese for Ricotta and the mozarella for the Cheddar. So delicious. I have made this dish several times already.
This recipe is easy to make and very filling. The left overs also make an excellent lunch the next day.

Yuuuum! I used basil/garlic/oregano tomato sauce to boost flavor. I will add more zucchini next time. Used fat free cheddar, so this entire dish was perfect for simply filling!
