This turned out super tasty! That cheesy topping is so satisfying and it's a great meal for just five points.
I used about four Roma tomatoes instead of two regular, and I roasted the vegetables for about 20 minutes to really cook down the water content and bring out the sweetness. The fresh herbs really make a difference. I used Rosemary, but I think Basil would be great too.
Next time I'll probably add some spinach and mushrooms.
