Deeeeelicious. Seriously. Well done. I substituted about 1 TB of basil in place of the thyme (just for my taste). So good, and surprisingly sweet! I paired it up with a Thomas Hearty Muffin: 100 calories. (Light English Muffin). A delicious lunch.
I edited this to use Wyler's chicken broth cubes, more onion, and less celery. Thought it also could have used more garlic-flavor. Overall, a great take-to-work/class lunch meal. Might add some shredded chicken next time, too.
ok, I think I will not add as much thyme next time.
This was a little sweet; I might make it again without roasting the garlic. Very good, and filling, though.
