I'm a vegetarian, so I left out the bacon. Tasted just fine without it. I also had a glut of Jerusalem artichokes this fall, so I substituted four of them for the bread. Yummy and probably healthier.
I don't think you can go wrong with this recipe. For my vegetarian daughter, I skipped the bacon. Could not find frozen butternut squash, so simply sliced one in half and baked it for 25 minutes at 350 and then cut it in to cubes. Skipped the cheese. The appearance is a bit unusual but the taste is very flavorful. My daughter really liked it as well.
I love this recipe and it is very easy to modify - fill it up with lots of veggies (peppers, brocolli, etc) and it is flavorful, filling, and low in points. Greart for breakfast or lunch.
