If you've never eaten steak in your life, this recipe might be pretty appealing.
I cooked it until 125 (medium mare) and then took it out to find a grey, undercooked, fleshy steak. (145 as the recipe suggested would have killed it, and all of it's flavor.) I asked for forgiveness, seared it, and let it rest, while the oven revived the soggy "herb crusted oven potatoes" for another 30 minutes.
