I added 6 small unpeeled potatoes & 1 pound of fresh peeled carrots, each cut into thirds to the pan. I put the potatoes on one side & the carrots on the other & coated all with some olive oil spray. My beef was 2-3/4 pounds, so it took longer to cook. I covered the potatoes & carrots looosely with foil about halfway through. Potatoes were dry & beef was tough. Next time I will likely add 2 pounds of carrots as my family truly enjoyed them more than I expected.
