This sandwhich is awesome! Instead of brushing barbecue sauce on the pork I created a seasoning rub that did not change the points of this recipe. I combined 1/2 Tbs of brown sugar, paprika, garlic powder, chili powder, salt, 1/4 tsp cayenne pepper, 1 tsp black pepper. I took this rub mixture and massaged it into the pork, then placed the pork in a slow cooker. I poured 1/2-3/4 cup of low sodium chicken stock around the pork and cooked on low for 8 hours. Delicious!
