Make sure to cut the cauliflower, carrots and potatoes into similar-size small pieces so they cook through in a similar amount of time.

Great flavor and very filling... Not super spicy.
This is very tasty. Since my family enjoys Thai flavors, they all liked it. I was a little put off by the smell of the cauliflower while it cooked because I don't normally eat cauliflower, but I could hardly taste it.
I don't understand the other reviews? This was so bland!! My whole family hated it. My husband added 1/2 a bottle of Frank's Red Hot Sauce just to choke it down.... I followed the recipe as is....NEVER AGAIN!!
Yum! I shredded the chicken and used PB2 in place of regular peanut butter. It's more like a stew than I expected it to be but it was perfect for a rainy and cold Sunday night dinner. I'll definitely be adding this into my rotation. Next time, I'll use less cilantro. The lime and crushed peanut garnish actually made it perfect so don't skip that!
