I love this slow cooker meal, because it requires no cooking. You just cup up some veggies and add some chicken breasts and you are done! It is a great meal to make on a Sunday, since it will give you a few meals worth of leftovers, saving time on those busy weeknights. For my crockpot, I can cook this for 4 hours and it is ready, so you may want to check on it before the 5-6 hours are up. I highly recommend adding a kick of Sriracha. I serve it with Skinny Rice (low glycemic basmati rice).
