I'm not a spicy lover so this was great! I used Thai Kitchen Red Curry Paste which is not very spicy. I added a lot of paste and salt to my liking because I found it a bit bland with the suggested amount. I used real peanut butter, not light. I cooked the chicken, carrots and peppers for 2 hrs then added the cauliflower and potatoes for another 2.5 hrs to avoid mushy veggies. I added cornstarch to thicken sauce because it was really loose. Overall this was yummy I will definitely make it again!
