Make sure to cut the cauliflower, carrots and potatoes into similar-size small pieces so they cook through in a similar amount of time.
Season to taste with salt and fresh lime juice before serving, if desired.

First time trying curry. Wasn't a fan of this dish and it's flavors at all. It was very moist and filling, however.

It was too bland, chicken was almost mushy and I only cocked it on low for 5 hours. Hard to believe this got high ratings.
