Make sure to cut the cauliflower, carrots and potatoes into similar-size small pieces so they cook through in a similar amount of time.

Came out really great! I did put in 4oz red curry paste as suggested by other reviewers. Came out perfect!

The chicken and sauce were good, but the vegetables were inedible - way too mushy for my taste. I omitted the potatoes and served it over coconut jasmine rice instead.
It is a very tasty recipe. The only issue I had was that it took longer to cook in the crock pot than indicated on the receipe.
