Does anyone have a recipe for pumpkin scones or pumpkin muffins? I'm craving pumpkin and really appreciate a recipe. I love Starbuck's pumpkin scones, but just found out they are 525 calories.

this might work for your craving. it's good when re-heated in a toaster oven.

Pumpkin Bread

Preparation Time: 15 min
Cooking Time: 50 min
Level of Difficulty: Easy
Course: snacks
Alternative! To make this bread into muffins, evenly distribute the batter among 8 cups of a muffin pan sprayed with nonstick spray. Cook for 35 minutes at 350 degrees, let cool, and enjoy!

Ingredients

* 15 oz canned pumpkin
* 1/4 cup(s) Egg Beaters Refrigerated Egg Whites
* 1 large egg(s)
* 1 tsp vanilla extract
* 1 1/4 cup(s) whole wheat flour
* 1/4 cup(s) all-purpose flour
* 1/2 cup(s) Splenda
* 1/4 cup(s) unpacked light brown sugar
* 1/2 cup(s) cranberries, chopped, or 1/4C raisins, chopped
* 2 1/4 tsp baking powder
* 1 1/2 tsp ground cinnamon
* 1/2 tsp table salt
* 1/3 tsp pumpkin pie spice


Instructions

1. Preheat oven to 350 degrees.
2. In a large bowl, combine both types of flour, Splenda, brown sugar, baking powder, cinnamon, salt, and pumpkin pie spice (in other words, all dry ingredients except for the cranberries or raisins).
3. In a medium bowl, mix together pumpkin, egg whites, egg, and vanilla extract (all the wet ingredients). Add this mixture to the bowl with the dry ingredients, and stir until just blended.
4. Slowly sprinkle chopped cranberries or raisins into the batter, making sure they don't all stick together, and mix to distribute them.
5. Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray. Bake for about 50 minutes, until the top of the loaf is firm to the touch. (Bread may be moist inside. This doesn't mean it's undercooked.) Allow to cool, and then cut into 8 slices. Enjoy!

These sound awesome! I, too, am craving pumpkin now that fall is officially here (and apple cider, apple donuts, cinnamon anything...)

Have you guys had trouble finding canned pumpkin? The last three times I've been to the grocery store, there was an empty shelf where the pumpkin used to be.

1/4 cup egg beaters

Mix and put in muffin tins
2 thingees I am told

A friend made up this recipe to duplicate the Starbuck's scones, but lighter. I ran the recipe through recipe builder and 8 servings came out at 3 pts. each. I made them today and they were a hit!

Pumpkin-Mini Choc Chip Scones

Combine:
2 cups Bisquick Heart smart
1/3 cup mini choc chips
6 pckts splenda
1/2 tsp. ground ginger
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ground cloves

Mix:
1/2 cup canned pumpkin
1 egg
3 Tbl. nf milk

Combine wet ingredients with dry. After combined, knead lightly together. Form into a ball and flatten slightly. Slice (like a pie)into 8 slices. Seperate slices on sprayed baking sheet and bake at 425 degrees for 10 minutes.
