Baked, Spiced Apples with a Crunchy Oat Topping

Roasting fruit enhances its natural sweetness. And the oat topping adds great crunch and flavour.

Ingredients

Apple

4 large, sweet-baking variety such as Gala or Rome

Uncooked rolled oats

½ cup(s)

Egg whites

2 serving(s), large, beaten until frothy

Ground cinnamon

¾ tsp(s)

Ground nutmeg

½ tsp(s), or freshly grated nutmeg

Instructions

  1. Preheat oven to 425ºF. Coat a nonstick baking sheet with cooking spray.
  2. To make filling, peel and core apples; cut each into six 1/4-inch-thick slices. Combine apples, 1 packet of Splenda, 1/2 teaspoon of cinnamon and nutmeg in a medium bowl; toss to combine. Spread apple mixture over prepared baking sheet so apples are mostly in a single layer. Bake for 5 minutes; flip slices with a spatula and bake for 5 minutes more.
  3. Meanwhile, to make topping, combine oats, remaining packet of Splenda, remaining 1/4 teaspoon of cinnamon and egg whites in a bowl; mix to combine. Spread oat mixture over another nonstick baking sheet and bake until lightly browned and crisp, about 2 minutes.
  4. To serve, place 6 slices of apple in each of 4 shallow bowls and top each with about 2 tablespoons of oat topping.
